PITTSBURGH — Mad Mex’s Shadyside location has become a testing ground for new items for the chain, and they could be rolling out to more locations soon.
The Big Burrito Restaurant Group recently celebrated its 30 year anniversary. Alongside that, the restaurant chain’s president, Bill Fuller, said he wants to welcome the restaurant into its “third generation.”
“I think about my kids meeting up with a bunch of their friends and going to Mad Mex, and they’re in their 20s and I was there in my 20s,” Fuller said. “Mad Mex has been around Pittsburgh for a long time, and it’s a place a lot of people still go to. It’s part of people’s dining lives, and it’s just exciting to kind of jazz it up a little bit. … There’s a lot to it that people love, but also people’s tastes change and the world changes, so we put together a team working in Shadyside to start trying different things while trying to keep the heart and soul of Mad Mex there.”
The restaurant has been quietly “tasting and testing for the better part of a year,” serving off menu items and special items, and it is now serving these items on menu. These items include street tacos, a new kind of wrap and updated enchiladas.
